R4L Hot Cocoa Cookies Recipe
You Will Need:
1 stick unsalted butter, softened
1/4 cup sugar
3/4 cup brown sugar
1 egg (2 eggs for gluten free cookies)
1/2 teaspoon vanilla extract
1 1/4 cups flour (use rice flour for gluten free cookies)
2 packets R4L Hot Cocoa Mix
3/4 teaspoon salt
1/2 teaspoon baking soda
1 cup chocolate chips
How to:
1. Preheat oven to 350°F. Lightly grease two cookie sheets, or line them with parchment paper, and set aside.
2. In a bowl, beat the butter and sugars until smooth. Stir in the egg(s), then add vanilla and mix well.
3. In a separate bowl, combine flour, R4L Hot Cocoa Mix, salt, and baking soda.
4. Slowly add the flour to the butter mixture, using a rubber spatula to combine. Fold in chocolate chips. Place dough in the freezer for 20 minutes, or refrigerate for 2 hours.
5. Portion dough into 2-inch balls. Place them 2 inches apart on prepared cookie sheets and flatten slightly. Bake for 10-12 minutes.
6. Remove from oven. Cool on the pan for 15 minutes, then transfer to a dish or cooling rack.
This recipe yields approximately 2 dozen cookies!
Recipes 4 Learning Transition Program
We are a Long Island-based work transition program helping to develop job skills and training for those who are differently-abled through kitchen and recipe-based experiences, in order to create a brighter future.
We Bake. We Learn. We Grow.
The Recipes 4 Learning Transition Program offers those with autism and other Intellectual & Developmental Disabilities (IDD) and Developmental Disabilities (DD) a two-year, non-credited transition program where they can gain job skills, social and daily living skills training.
Those with IDD/DD, aged 18+ and have completed high school can apply. Transition planning will be for 4 hours per week. After being interviewed and found eligible, applicants will begin the job skills training to meet the goals for success, as outlined below.
Participants will gain hands-on experience in a caring and engaging environment within the food industry. Participants can expect to be a part of production for a variety of baking-related food product creations, such as the Recipes 4 Learning Ready-to-Make Kits; preparing catering orders; or developing their own recipes!

Changing Lives
The Recipes 4 Learning Transition Program provides an opportunity to learn critically important work and life skills with a focus on Career Development in the food industry.
We utilize principles of reinforcement and positive behavior support in order to increase the participants range of skills, social awareness, self-awareness, and confidence. The program currently operates out of our commercial kitchen and production facility at the Bellport Outlets.
- 2 year program enrollment
- 4 hours per week. Sessions run weekly, either two 2-hr sessions, or one 4-hr session based on ability
- Tuition: $800 per month
- Up to 12 participants per session
- Ratio of 3:1 or 4:1, depending on skill level. All staff, volunteers and trainers are screened for criminal background and excluded provider status.
